Troubleshoot why mkdocs build segfaults with ubuntu-latest but not macos-14 #88

Using the ubuntu-latest GitHub actions image, the docs build fails due to mkdocs segfaulting: https://github.com/GMLC-TDC/pyhelics/actions/runs/7849225699/job/21422103957
With the macOS-14 (M1) runner, it works: https://github.com/GMLC-TDC/pyhelics/actions/runs/7849506854/job/21423012737

@kdheepak any idea what's going on?

Weird. No idea what is going on. Maybe try a simpler action with just import helics?
