release of Spoon 10.1.0

We're getting late on releasing Spoon because of issues with the CD pipeline.

However, we're making progress, see

• continuous delivery CD pipeline for releases #3890
• WIP release: next release #4636
• chore: bump snapshot version to 10.1.0 #4660

So following #4660, the plan is to release commit 17e000b as 10.1.0, see SpoonLabs/spoon-deploy#6

@monperrus Spoon 10.1.0 is not on maven central. https://mvnrepository.com/artifact/fr.inria.gforge.spoon/spoon-core. The beta versions of 10.1.0 somehow are there.

10.1.0 has not been released yet.

Beta versions of release X precede said release, so there's nothing strange about beta versions being available while the stable version is not.
