- 1 pound ground beef
- 2 tablespoons minced fresh garlic
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 or 2 teaspoons dried chili pepper flakes
- 2 (1 ounce) packages taco seasoning mix
- 1/3 cup grated parmesan cheese
- 8 slices bacon, cooked crisp and chopped
- 8 ounce can tomato sauce
- 2 10 ounce cans tomato soup
- 2 tablespoons brown sugar

- 4 cups shredded Tex-Mex cheese, divided
- 3 cups cooked macaroni (1-1/2 cup dry)
- In a large skillet brown the beef with garlic, onion, bell pepper, and chili pepper flakes. Drain any fat.
- Add in taco seasoning mix and parmesan cheese. Mix to combine and cook 1 minute.
- Add in the bacon, tomato sauce, tomato soup, and brown sugar. Simmer for 30 minutes, stirring occasionally.
- Preheat oven to 350F.
- Season with seasoning salt and pepper. Mix in 2 cups of the Tex-Mex cheese. Fold in the macaroni.
- Transfer the mixture to a greased 13 x 9 inch casserole dish. Sprinkle with grated Parmesean sheese and then the remaining 2 cups of the Tex-Mex cheese.
- Bake uncovered for about 20 minutes, or until bubbly and the cheese has melted.
