Carrots with Ginger and Honey

Time: 20 minutes

Ingredients

  • 1 pound carrots
  • 1 tablespoon butter
  • 1 inch piece of fresh ginger (minced)
  • 2 tablespoons honey

Directions

  1. Peel carrots and slice to a thickness of no more than 1/2". They can be cut lengthwise.
  2. Bring a medium pot of water to a boil. Salt water and add carrots. Simmer until carrots are almost tender, 3 to 4 minutes.
  3. Melt butter in a large skillet over medium-high heat. Add ginger and saute for 1 minute.
  4. Add carrots and honey and cook for 4 to 5 minutes, or until carrots are glazed.
