rancher desktop support

hello

i am unable to use docker desktop due to corporate licensing concerns.

i ask that you consider supporting rancher desktop, which now supports docker desktop extensions.

i am unsure of the level of compatibility between docker and rancher here,
but blindly attempting to install from the cli didn't work.

i expect this is likely a windows issue, it usually is,
but it might be about rancher/docker desktop extension itself.

a look at the most recent logs sees jupyter container failing,
but there are likely also other issues.

Oh I didn't know rancher had this extension concept, too. Was user of Lima for sometimes, too.

I'll look into it!
