Allow non-editors to edit and allow editors to approve that edit to show up.

Hmm, seems hard to avoid conflicting edits though.
Maybe: allow non editors (as long as they are logged in with repl.it or discord to make draft articles (like wikipedia, pretty much)

the draft of course would need to be approved by admin

We could allow anyone to create/edit entries without approval, but unpublish/revert them if they contain inappropriate content. Either way, there needs to be a guidelines page that all users must agree to before having the ability to post content on Repldex
