[FEATURE REQUEST] Option to only change the version in package.json without running npm/yarn/pnpm command

Feature description

1. My personally weird habit is to update all package versions in package.json then manually run install command, thus would be nice if can only change the version in package.json without running install command.
2. It seems there might be an issue: when I attempt to upgrade a dependency, the postinstall command does not execute as expected.

Yeah, that would be more ideal to change them all to the desired versions and then run a single install action. Similar to what yarn has with upgrade interactive

I don't rly have time to implement this. If anyone is willing, I'd be happy to review a PR.

Did a bit digging, I found that only yarn and pnpm can update package.json and lock file without downloading files. But still calls npm, ideally I want it only change the version in package.json without sending requests to npm. I will see if I can find time to implement that.

One way to accomplish this would be to use vim.api.nvim_buf_set_text to update the text. This is how crates.nvim updates versions in Cargo.toml.

This approach would be compatible across all (current and future) package managers, and is performant since it does not require additional calls to an external API.
