This PR contains:

  • regenerated and restructured matrix inventory
  • allow using interpolation method in interpolate() via option method="linear". The options are "linear" and "nearest-neighbour"
  • for each matrix now there is a version for both "linear" and "nearest-neighbour"
  • better check to see if index.json is outdated and needs to be downloaded
  • added new notebooks, https://earthkit-regrid.readthedocs.io/en/develop/examples/index.html
  • updated documentation
  • added healpix grids to the matrix inventory documentation
