Removing out-dated references to COVID and adjusting language to fit our current reality

Changes proposed in this pull request:

  • Remove or adjust all references to COVID. The guide is re-focused on distributed work over covid-specific practices
  • Updated language around variable metrics like number of employees and years in business so it does not need to be updated often
  • Changed references about Skype to Teams
